海產粥一直是J很愛的料理,海鮮的鮮度與粥的綿密口感,真的讓人胃口大開,包準小朋友與老人家都會超級愛
2-3人份備料: 1. Shrimps 5pc………….蝦子五隻 2. Neritic Squid 1pc…….小卷一隻 3. Clams 10pc………….蛤蠣十顆 4. Rice 1cup………….一量杯的米 5. Ginger,Garlic,Celery few……………薑末、蒜末、芹菜少許 6. Few salt and pepper….鹽巴胡椒少許 7. Rice wine few………….米酒少許 |
做法recipe:
備料方面,先把薑、蒜與芹菜切末,切妥小卷,蝦子脫殼並保留頭部當湯底使用。
Preparing : Mince ginger and garlic. Chop celeries and squid. Pill shrimps with your finger. DONOT throw the head of shrimps. Keep them for broth.
蒜末與薑末爆香,加入米酒與蝦子與蝦殼拌炒,待蝦子紅了,拿出蝦子留下蝦頭,加水煮粥。
Sauté ginger and garlic until you see gold color and smell flavorful scent. Add wine and shrimps inside. Cook them until shrimps turning red. Pick out shrimps and keep heads in pot.
煮沸約10-15分鐘,蝦頭的鮮甜完全留在湯底,拾起蝦頭,加入鹽巴、胡椒與生米進去,蓋鍋蓋等待煮熟,期間記得攪拌喔~
筆記✏️生米煮比熟米香,米飯會吸滿湯汁
Add water, salt and pepper, then boil it for 5mins. Perfect seafood broth is down!
Finally, add rice,shrimps, squids and clams inside and cook for 10-15min.

海鮮料可以依自己所需更換,想放魚塊也是可以的~
高湯部分,J是從簡使用蝦頭熬高湯,講究者可以考慮用昆布熬煮,味道會更鮮甜喔
